Grate the potatoes and squeeze out excess water using a clean kitchen towel or your hands. Removing moisture ensures crispy fritters.
In a mixing bowl, combine grated potatoes, green onions, parsley, egg, garlic, paprika, salt, pepper and flour and mix to form almost a “paste.”
Heat about ¼ inch of oil in a large frying pan over medium heat. Test with a small piece of the mixture; if it sizzles, the oil is ready.
Scoop a heaping tablespoon of the potato mixture, flatten slightly, and place in the hot oil. Cook for 3-4 minutes per side or until golden brown and crispy.
Remove fritters from the pan and drain on a paper towel-lined plate until ready to serve.
