Holiday Fritters

Pan-fried potato fritters are savoury, crispy patties made from grated potatoes, bound together with our star ingredient, an egg! These fritters are quick to prepare, versatile, and popular as a snack, side dish, or light meal.

Equipment

  • Large frying pan
  • Bowl, cheese/box grater

Ingredients
  

FRITTERS

  • 2 - 3 medium potatoes, grated (if using Russets, please peel)
  • 1 - 2 stalks green onion, thinly sliced
  • 2 Tbsp. fresh parsley or cilantro, chopped
  • 1 large egg
  • ½ tsp. garlic powder
  • ½ tsp. paprika
  • Pinch salt + pepepr
  • ¼ cup all-purpose flour
  • About ½ cup oil for frying (vegetable, canola or olive oil)

HONEY CURRY MAYO

  • 4 - 6 Tbsp. mayo
  • 2 Tbsp. honey
  • 1 tsp. curry powder
  • OPTIONAL: Dried dill
  • Salt and pepper to taste

Instructions
 

FRITTERS

  • Grate the potatoes and squeeze out excess water using a clean kitchen towel or your hands. Removing moisture ensures crispy fritters.
  • In a mixing bowl, combine grated potatoes, green onions, parsley, egg, garlic, paprika, salt, pepper and flour and mix to form almost a “paste.”
  • Heat about ¼ inch of oil in a large frying pan over medium heat. Test with a small piece of the mixture; if it sizzles, the oil is ready.
  • Scoop a heaping tablespoon of the potato mixture, flatten slightly, and place in the hot oil. Cook for 3-4 minutes per side or until golden brown and crispy.
  • Remove fritters from the pan and drain on a paper towel-lined plate until ready to serve.
  • Dress with holiday toppers (see notes) and serve as a side dish, fun appy or top with poached or fried eggs for a holiday brunch idea!

HONEY CURRY MAYO

  • In a bowl, combine all of the ingredients and then pop into the fridge until you’re ready to use it. It will keep covered in the fridge for up to a week.

The topping options for our fritters are endless!
Here are just a few:
  • Crispy fried onions or shallots (homemade or store bought)
  • Honey curry mayo
  • Dollops of sour cream + cranberries or dried cranberries
  • Dollop of sour cream + shredded cheese + crispy bacon
  • 1 Tbsp. pesto + 2 Tbsp.mayo
  • Drizzle of honey + finely chopped chives
