
Egg Fried Rice
Eggy fried rice is the ultimate bites-on-a-budget dish — fluffy eggs, savoury rice, and a burst of flavour all tossed together in one sizzling pan! Equipment
- Large frying pan + spatula
Ingredients
- 1 Tbsp. Oil
- 2 stalks green onion, chopped
- 2 tsp. fresh minced ginger (or ½ tsp. ground ginger)
- ½ cup frozen peas
- ½ cup frozen corn
- 3 cups cooked rice
- 2 eggs
- 2 Tbsp. butter, divided
- 2-3 Tbsp. soy sauce
- 2 tsp. sesame oil
- Pepper to taste
Instructions
- Preheat a large frying pan to medium heat.
- Add the oil, onion, pepper and ginger to the pan and stir fry until tender, a couple minutes. Next let’s add our corn & peas and cook a little longer. If you wish to add a little more oil for moisture, you can.
- Add the cooked rice and stir-fry a bit more.
- Push everything to the sides of the pan, then toss in a lump of butter then crack in your eggs and stir-fry them until everything is cooked.
- Add the soy sauce, then stir-fry everything again.
- Add a little more butter, add the sesame oil, season with pepper, taste and enjoy!
