Egg Fried Rice

Eggy fried rice is the ultimate bites-on-a-budget dish — fluffy eggs, savoury rice, and a burst of flavour all tossed together in one sizzling pan! It’s quick, comforting, and proof that delicious doesn’t have to break the bank. 🥢🍳

Equipment

  • Large frying pan + spatula

Ingredients
  

  • 1 Tbsp. Oil
  • 2 stalks green onion, chopped
  • 2 tsp. fresh minced ginger (or ½ tsp. ground ginger)
  • ½ cup frozen peas
  • ½ cup frozen corn
  • 3 cups cooked rice
  • 2 eggs
  • 2 Tbsp. butter, divided
  • 2-3 Tbsp. soy sauce
  • 2 tsp. sesame oil
  • Pepper to taste

Instructions
 

  • Preheat a large frying pan to medium heat.
  • Add the oil, onion, pepper and ginger to the pan and stir fry until tender, a couple minutes. Next let’s add our corn & peas and cook a little longer. If you wish to add a little more oil for moisture, you can.
  • Add the cooked rice and stir-fry a bit more.
  • Push everything to the sides of the pan, then toss in a lump of butter then crack in your eggs and stir-fry them until everything is cooked.
  • Add the soy sauce, then stir-fry everything again.
  • Add a little more butter, add the sesame oil, season with pepper, taste and enjoy!
