COOK WITH MEG: Finnish Pannukakku

Finnish Pannukakku (pronounced pahn-oo-kah-koo) is a traditional Finnish oven pancake that’s custardy, golden, and slightly crisp at the edges. Unlike fluffy North American pancakes, pannukakku is baked in a pan, not flipped on a griddle - think of it as a cross between a Dutch baby and a flan-like crepe.

Equipment

  • 9x13 baking dish
  • Electric mixer + large bowl
  • 4 cup measure, optional

Ingredients
  

  • 6 Tbsp. butter, salted or unsalted
  • 4 large eggs
  • ¾ cup granulated white sugar
  • 1 cup all purpose flour
  • 1 Tbsp vanilla extract
  • 2 cups milk
  • Pinch salt

Instructions
 

  • Turn on the oven to 350 degrees, and add your cubes of butter. Place the baking dish in the oven. By the time the oven is preheated, it should be sizzling when you take it out.
  • While this happens, mix your other ingredients until super frothy and bubbly.
  • Slowly pour batter into the pan over the melted butter.
  • Bake about 40 minutes.
  • Slice and serve – it will be sweet but you can top any way you wish!
  • TOPPING OPTIONS: Cinnamon, lemon, powdered sugar, dollops of jam, or syrup.
