
Lobster Devilled Eggs
Courtesy of Chef Lynn Crawford: “You know you’re at a great party when these devilled eggs come out. The addition of lobster is a fresh and special way to dress up a classic appetizer. Try serving these with a round of Caesars and invite me over!”
Ingredients
- 6 Hard-cooked eggs, peeled and halved lengthwise
- ½ cup Cooked lobster, chopped into small pieces (reserve 12 small pieces for garnish)
- ¼ cup Mayonnaise
- 1 tsp. Dijon mustard
- 2 Tbsp. Chives, finely chopped
- ½ tsp. Lemon juice
- Hot sauce
- Salt and pepper
Instructions
- In a small bowl, combine egg yolks, lobster meat, mayonnaise, mustard, chives, and lemon juice; stir until smooth. Season to taste with hot sauce, salt and pepper.
- Fill egg whites with yolk mixture, arrange on a platter and garnish with reserved lobster pieces. Serve immediately.
